Standard for pork, chicken cuts: guide for traders, retailers, and consumers

October 21, 2021. The Department of Agriculture - Bureau of Agriculture and Fisheries Standards (DA-BAFS) released two (2) infographics for Philippine National Standards (PNS) on Pork Cuts (PNS/BAFS 41:2018) and Chicken Cuts (PNS/BAFS 285:2019) as guides for traders, retailers and consumers.

The infographics present images of the standardized pork and chicken cuts intended for trade as fresh, chilled and frozen. The lateral and medial views of pork carcass are divided into eight (8) retail cuts, while the chicken carcass is sliced and labeled as front half, back half and other cuts (e.g. household cuts and commercial cuts).

During the BAFS webinar on Safe and Quality Meats, Dr. Eduardo Jose T. Manuel, Head of Abattoir Unit at the Bureau of Animal Industry (BAI) stated, “Standardizing the cutting and naming of retail cuts are prerequisites for good merchandising and proper utilization of the whole carcass. It is important that the customer knows what they are getting.”
