Beef, beef! Know your beef cuts

September 19, 2022. The piece of meat initially separated from the carcass of a beef cattle after butchering is called “Beef Primal Cuts”. These ‘primals’ are divided into smaller cuts that are eventually sent for further cutting and preparation until they reach the final cuts, known as portion cuts, offering customers a wide array of choices.

Standardized beef primal cuts are necessary to guide producers, retailers, and consumers on the various choice cuts.

For better appreciation and understanding, the Department of Agriculture – Bureau of Agriculture and Fisheries Standards (DA-BAFS) has recently published a poster that depicts images of beef primal cuts intended for trade as fresh, chilled, frozen, and aged, following the PNS Beef Primal Cuts (PNS/BAFS 83:2018).
